Mere Fish Farm is tucked away near the school in Mere.
The farm hatches, rears and smokes the trout on-site supplying farm shops, deli’s and restaurants as well as attending local farmer markets.
Two chalk streams provide the trout with the cool crystal clear water they thrive on.
Mere Trout is well known in the area for its delicious Smoked Trout Terrine, made using its cold smoked trout mixed with local yoghurt, butter, parsley and lemon.
As well as supplying fresh trout, the farm also hot smokes its trout, whereby the trout is smoked at a higher temperature for a short period. Mere Trout recently launched its hot smoked trout based Smørgel, which is made using red ions, gherkins and capers.
